This specialty refreshing cold juice, is served widely on Iftar tables, to break the fast, during the month of Ramadan. The drink can be diluted with more water or sweetened with more sugar. But I do recommend to start with the measurement I listed. You can adjust to your taste after you blend it.

Instructions
  1. Tear the apricot leather sheet into pieces, place in a bowl and cover it with the hot water
  2. Let it soak for at least 4 hours
  3. Place the soaked apricot and its’ liquid into a blender, add the rest of the cold water, the sugar and process together for a couple of minutes until smooth
  4. Pass the apricot juice through a fine strainer, this should take care of any fine lumps
  5. Stir in the orange blossom water
  6. Serve it cold on top of ice with a sprinkle of pine nuts
