Instructions
  1. Combine all the spices for the fish spice rub
  2. Wash and clean the fish very well. Open the the fish and start rubbing the fish with the spice rub
  3. Cover the fish in aluminum foil and set in the oven at 400F for about 25 minutes, until cooked
  4. If using the medium fish ("ajal"), set one aside to use as a whole. Take the others and remove the skin, head, and tale for the broth
  5. In a large pot, put the skin, head, and tale of the fish with the other broth ingredients listed above. Let it simmer
  6. In a second pot, add the 3 cups of oil, onions and brown sugar cubes and caramelize the onions until dark brown
  7. Remove excess oil from second pot and add in the broth. Let simmer for about 7 minutes
  8. Add in 2 cups of rice and the rice spices (under Fish Rice group above). The broth should cover the rice about 3 cm, not more.
  9. When the rice is about 3/4 done, add the fish meat
  10. When cooked, set the rice and fish on a plate, lay the full fish in the center, and decorate with fresh coriander and your fried nuts.
