  1. Tear the apricot leather sheet into pieces, place in a bowl and cover it with the hot water
  2. Let it soak for at least 4 hours
  3. Place the soaked apricot and its’ liquid into a blender, add the rest of the cold water, the sugar and process together for a couple of minutes until smooth
  4. Pass the apricot juice through a fine strainer, this should take care of any fine lumps
  5. Stir in the orange blossom water
  6. Serve it cold on top of ice with a sprinkle of pine nuts
