Roasted Veggies and Lentil Salad with Za'atar Dressing
Place cut vegetables on a baking sheet lined with parchment paper.
Season with salt, pepper, and cumin.
Roast in the oven for 15-20 minutes until tender and charred.
Za'atar Tahini Dressing
Mix the sauce ingredients in a small bowl and add water to get preferred consistency.
In a bowl, add the drained lentils, roasted vegetables, fresh vegetables, sundried tomatoes and mix with the tahini sauce. Garnish with za'atar and sumac generously.
