Ingredients
- 1 cup of lightly salted dry roasted peanuts, crushed (not too fine). We do this so that thisof peanuts is used as a filler between the full pieces of peanuts
- 4 cups of whole lightly salted peanuts
- 3 cups syrup Arabic Attar
Attar Syrup
- 6 cups sugar
- 3 cups water
- 2 tablespoon lemon juice
- 1/2 teaspoon rose water

Instructions
- Make the Arabic syrup first (recipe below). It can be done well in advance.
- Spray a flat wide baking pan with crisco. Baking tray size: about 17 by 12 inches
- Our peanuts were already roasted, but we roasted the 4 whole cups of peanuts (not the 1 crushed) for 5 min or so for a fresher roasted flavor.
- After roasting the peanuts, add the crushed 1 cup to the pan, followed by the Arabic Syrup (attar). We used 3 cups of syrup (recipe below).
- When the syrup starts to foam around the edges, it is a sign that you are close to done. Ours started to foam around 15 minutes. A minute or so later, the caramel will be golden brown and ready to be transferred to a flat baking tray.
- Shake tray to flatten and spread out the peanut mix, and let cool for a few hours. Cut and enjoy! Store refrigerated and pull out of fridge a little prior to serving.
Attar Syrup
- Add 6 cups of sugar and 3 cups water to a pot over stovetop, stirring frequently until boil starts. Add 2 full tablespoons of lemon juice and 1/2 teaspoon rose water. Lower heat. We simmer the syrup for an hour, stirring occasionally (unlike other attar varieties that simmer for only 15-20 minutes.) You will only need 3 or so cups of this syrup for the recipe I shared.
