Ingredients
- 2 cups freekeh whole, washed (soak in warm water for 2 hours then drain)
- 2 onions chopped
- 2 cups chicken stock
- 2 chicken cleaned
- almonds, pinenuts fried, for decoration

Instructions
- Sprinkle chicken with salt and oil and roast at 400F (200C)
- Fry onions in a pan with oil until its color turns slightly brown.
- Drain the freekeh and stir fry it for 2 minutes.
- Add the chicken stock and cook it as you would cook rice
- When it’s done, transfer it to a serving plate then garnish it with nuts and arrange the roasted chicken on top as the final touch.
