Palestinian Za’atar Blend

Special thank you to Nadia Tommalieh for sharing her family’s Za’atar blend with us for International Za’atar Day!

There are many different ways to combine and mix dried Za’atar (wild thyme), and I am excited to try out this special recipe!

  1. Using a food processor or electric spice grinder, finely grind the dried Za’atar leaves.
  2. Add the ground Za’atar to a deep bowl. Drizzle olive oil on top and rub them between your palms for a minute.⠀⠀⠀⠀⠀⠀
  3. Add the sumac, salt, cumin and all spice, and rub the mixture together again until well blended.⠀⠀⠀⠀⠀⠀
  4. Add toasted sesame seeds, mix well and taste. You can adjust both the sumac and sesame seeds to fit your taste.⠀⠀⠀⠀⠀⠀
  5. Store in an airtight container for up to 6 months.⠀⠀⠀⠀⠀⠀
  6. Tip: For best results, use high-quality olive oil, sumac, and roasted sesame seeds.
