Ingredients
- 1 eggplant peeled and cut into a half a cm thick
- 1 cut into medium sized florets small cauliflower
- 5 tbsp olive oil
- salt and pepper
- 2 tbsp thyme mix Za'atar mix
- 1 cup pomegranate seeds
- 3 cups arugula
- 1 cup parsley
For the Dressing
- 1/4 cup tahini
- 4 tbsp lemon juice
- cold water to bring the dressing the smooth consistancy
- 1 tbsp thyme mix Za'atar mix
- salt and pepper to taste
