Nadia of potsnbites initially got our attention through her beautifully prepared Middle Eastern breakfasts and desserts.  We love the variety of vegetarian Middle Eastern dishes she prepares, especially as many vegetarians and vegans are now becoming familiar with Middle Eastern food because of the variety of these types of dishes in our cuisine!

I am Lebanese living in Lebanon, I hold a BA in Advertising & Pubic Relations, my professional background is based on Catering sales, Banquet and Event management.

What is your favorite Middle Eastern dish to make:

I love to prepare and eat vegetarian dishes the most (hot & cold appetizers or Mezza)

Do you prefer traditional Middle Eastern dishes or modern/fusion Middle Eastern dishes:

I love traditional but I can’t resist adding twists to such dishes either presentation wise or texture wise. Though my twists never cancel the identity of the original dish.

What do you love most about cooking Middle Eastern cuisine:

The best part in preparing Middle Eastern dishes is how rich they are in seasonal vegetables and how versatile they can be. Moreover they are healthy.

The list on instagram is long: manal.massoud, mzcuisin, chef layla fathallah, maman_chocolat, fardos kitchen, nivin’s kitchen, hungry paprika, ranas kitchen lab……..

What is a must have tool in your kitchen for making Middle Eastern food:

I have the minimum tools in my kitchen, nothing seems the most important, but a pressure cook pot is great to save time & enhance flavour.

What advice do you have for someone just starting to find their way around the kitchen:

Be patient, repeat if you failed a recipe and always have notes for every trial to reach best results.

What nostalgic candy bar would you grab on walks to the local deken when you were a kid:

Dabkeh, Tarboush & Unica.
