Ingredients
- 2 cups cold chickpeas (220 g) cooked
- 1/2 cup tahini sauce
- 3 tablespoons lemon juice
- 1 clove garlic optional
- 1 teaspoon salt
- 3 ice cubes crushed
- 1 tablespoon extra virgin olive oil
- parsley for garnish
- pine nuts for garnish

Instructions
- Mix the cold chickpeas and a clove of garlic in the food processor at high speed, until you get a very smooth paste.
- Add the crushed ice to make the paste nice and white.
- Continue using the food processor: add the rest of the ingredients to the chickpeas paste (salt, lemon juice, tahini) and mix thoroughly. The final paste should be smooth and firm but not dry. It should be easy to spread. Check if it needs more salt or lemon juice.
- Transfer to a plate and decorate with a drizzle of olive oil, some parsley and a few chickpeas. You can add some nice golden fried pine nuts if you like. Enjoy!
