Ingredients
- 1 cup cooked lentils (boiled with cumin,salt, pepper)
- 2 cups brussel sprouts halved or quartered
- 1 red onion thinly sliced
- 1 in carrots cutcircles
- salt pepper, cumin (for seasoning vegetables)
- 2 cups fresh parsley
- 1/2 cup fresh mint
- 1/4 cup sundried tomatoes
Tahini Za'atar Dressing
- 1/4 cup of tahini sesame paste
- 1/2 lemon juice
- salt for taste
- water for right consistency
- Garnish with Za'atar and Sumac
- 1/4 cup sundried tomatoes
- For the tahini dressing:
- 1/4 cup of tahini sesame paste
- 1/2 lemon juice
- salt for taste
- water for right consistency
- Garnish with Za'atar and Sumac

Tahini Za'atar Dressing

Instructions
- Place cut vegetables on a baking sheet lined with parchment paper.
- Season with salt, pepper, and cumin.
- Roast in the oven for 15-20 minutes until tender and charred.
Za'atar Tahini Dressing
- Mix the sauce ingredients in a small bowl and add water to get preferred consistency.
- In a bowl, add the drained lentils, roasted vegetables, fresh vegetables, sundried tomatoes and mix with the tahini sauce. Garnish with za'atar and sumac generously.
