Instructions
  1. Place cut vegetables on a baking sheet lined with parchment paper.
  2. Season with salt, pepper, and cumin.
  3. Roast in the oven for 15-20 minutes until tender and charred.
Za'atar Tahini Dressing
  1. Mix the sauce ingredients in a small bowl and add water to get preferred consistency.
  2. In a bowl, add the drained lentils, roasted vegetables, fresh vegetables, sundried tomatoes and mix with the tahini sauce. Garnish with za'atar and sumac generously.
