Safa’s Your Lebanon Chef Feature Page
Today, my kitchen experiments came to a very yummy treat…cereal cakes is an idea I have been playing around with and the result is so yummy every time. Smacks cereal is one of our favorites and this cake tasted like the Russian honey cake Medovick.

Ingredients
Cake crust
- 3 eggs
- 1/2 cup sugar or honey
- 1/2 cup milk
- 1/2 cup oil
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 1/2 cups ground smacks cereal or alternate similar cereal
Cream frosting
- 3 cubes Kiri cheese
- 1 packet dream whip
- 3 tablespoons sweetened condensed milk
- 1/2 cup strained yogurt or labneh

Instructions
- Whisk eggs, sugar, baking powder and vanilla until the mixture is pale and foamy.
- Add the milk and oil then mix .
- Add the cereal flour with a pinch of salt and mix until all combined.
- Line the baking tray (tart pan) with baking paper and bake the cake in a preheated oven at 350 f. Or 175 c., in the middle rack for 20 minutes or until the tooth pick comes out clean.
- Let it cool a little before taking it out of the pan and let cool completely before adding the frosting.
Cream frosting
- Mix all frosting ingredients together and spread on top of cake.
- Refrigerate for two hours before serving. Top with fruit and honey.
