Ingredients
- 3 bags okra frozen
- 3 small onions thinly sliced (julienned, "french cut")
- 5 cloves garlic diced
- 1/4 cup olive oil
- 1 pound beef or lamb, cubed
- 1 teaspoon ground cinnamon
- 6 oz tomato paste
- 10 cups water
- salt to taste
- black pepper to taste

Instructions
- Spray tray with vegetable oil, spread the okra in one even layer on the tray & spray them with vegetable oil
- Place the tray in the oven at bake 450F, and every three minutes flip/stir the okra so that it doesn’t burn on one side
- Do this until the okra is a light brown color, approx. 10-15 minutes, set aside
- In a large pot, fry the onions in ¼ cup of olive oil, add the garlic in when the onions are a light golden color
- Add in the meat and ground cinnamon, cook until no longer red
- Add the 10 cups of water, the top of the pot will begin to foam after 5 minutes, and you have to remove the foam. Cover and let it boil on low heat for about 40 minutes.
- Once the meat is soft, add tomato paste, okra, salt, black pepper
- Boil in pot for 10 minutes

- Alternately, instead of step 8, after mixing in the okra, transfer the food to a dish and bake in the oven at 400 for 10 minutes
- Dish can be cooked in pressure cooker for about 15 minutes instead of a pot
