A flavorful, and easy make ahead dessert that I like to serve to my guests after an elaborate meal. The Ashta ingredient (Arabic thick cream) can be homemade or you can use the ready-made cans sold in middle eastern grocery stores.

Instructions
  1. Combine both the milk and semolina and cook over medium heat stirring constantly until it thickens to the consistency of a pudding
  2. Mix in both the finely crushed mastic and orange blossom water and bring to a quick boil
  3. Pour the pudding into a flat 1 inch deep serving platter
  4. Let it cool slightly then spread the Ashta evenly over it
  5. Cover and refrigerate for at least 2 hours
Orange Blossom Syrup
  1. Dissolve the sugar in the water and cook over medium heat until the syrup thickens a bit about 10-12 minutes.
  2. Add the lemon juice and orange blossom water and cook for another 3 minutes
  3. This step is optional, I add few leaves of attar of rose geranium, to enhance the flavor a bit more
  4. Cool the syrup and refrigerate
Serving
  1. Both the syrup and pudding should be cold enough before serving
  2. Just before serving, generously spread the crushed pistachio over the pudding
  3. Cut into individual pieces and serve it with a drizzle of the scented syrup.
