Ingredients
Dough
- 4 pounds semolina
- 1 pound flour
- 1/4 cup rose water
- 1/4 cup blossom water
- 2 tablespoons mahleb
- 1 1/2 tablespoons yeast
- 9 sticks unsalted butter 9 sticks softened at room temperature before use
Dates filling
- 1 stick unsalted butter (4 oz)
- 6 pounds date ground
- 1 teaspoon rose water
- 1 teaspoon blossom water
Walnut filling
- 3 pounds walnuts ground
- 1/4 cup sugar
- 1 teaspoon rose water
- 1 teaspoon blossom water

Instructions
- Mix together the semolina, flour, and 9 sticks of the softened butter. Mix well and cover for 5 hours
- Add rose water (1/2), blossom water (1/2), mahleb and yeast to the dough, mix again very well (best with hands). Add in more of the rose and blossom water, Add in remaining softened butter as needed. You want too reach a semolina dough consistency, it should not be too liquid or too dry.
- For the Dates filling: mix 6 pounds of ground dates with 1 stick of unsalted butter, 1 teaspoon of rosewater, and 1 teaspoon blossom water. Roll into balls.
- For the Walnut filling: mix 3 pounds of ground walnuts with 1/4 cup regular sugar, 1 teaspoon rose water, and 1 teaspoon blossom water
- Roll ball size of dough in hand, and use thumb to imprint into the center of the ball. Add the date or walnut stuffing, close by rolling the dough upwards while turning the dough in your hand constantly. Press the sealed and stuffed dough ball into the mold of choice!
- Bake at 500 F , check on them after 8-9 minutes.
