Turmous is a must have snack in our household. It is easy to prepare and lasts for weeks in the fridge.
How to prepare Turmous (Lupin)
Soak the lupin beans in a container with water for 24 hours (water should cover the beans by at least 2 inches)
Drain the water out and put the beans in a pot with fresh water (water should cover the beans)
When it starts to boil, switch to low heat and boil for ten minutes
Transfer to cold water immediately
Dissolve 3 tablespoons of salt in a cup of water. Pour this water over the beans and stir. Add enough cold water so that they are covered.
Store in the fridge, they will last two months at least.
- If you plan to keep them for multiple weeks, change the water every week by draining, dissolving 3 tablespoons of salt in a cup of water, adding it to the beans and covering again with more fresh water.
