If you want an impressive dinner, then it’s this classic combination of lamb and Za’atar. It’s divine when paired with figs, grapes and slices of sour green cooking apples.

Ingredients
- 12-15 lamb chops or cutlets
- 6 fresh figs quartered
- Two handfuls of green grapes
- 2 medium green cooking apples sliced
Marinade
- 2 tbsp extra virgin olive oil
- 3 tbsp of Za’atar
- 1 tbsp Pomegranate Molasses
- 1/2 tsp chilli flakes optional
- 1 tbsp apple vinegar
- 1 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp turmeric

Instructions
- Mix together all of the marinade ingredients
- Pour it over the chops
- Leave in the fridge for an hour or so
- Preheat the oven
- Take the chops out of the fridge 15 minutes before you’re going to roast
- Remove from the marinade
- Put them on a large baking tray with half of the marinade over a parchment paper
- ( leave the rest of the marinade for later)
- Roast for 15 minutes
- Add the figs, grapes, slices of apples
- Drizzle some of the remaining marinade over
- Continue to roast for another 15 to 20 minutes ( cook it less or more according to your preference)
- Remove from the oven. Decorate with chopped parsley and serve while hot.
