Mediterranean Lentil Salad by Gemini Bakes

• 1 cup lentils boiled
• 1 tomato chopped
• 1 onion chopped
• handful parsley chopped

Dressing

• 1 clove garlic crushed
• 2 tablespoon extra virgin olive oil
• 1 lemon juiced
• 1 teaspoon salt

Course Salad Cuisine Middle Eastern, Vegan Servings Ingredients 1 cup lentils boiled 1 tomato chopped 1 onion chopped handful parsley chopped Dressing 1 clove garlic crushed 2 tablespoon extra virgin olive oil 1 lemon juiced 1 teaspoon salt

Instructions

1. Combine the boiled lentils, chopped tomato, chopped onion and parsley in a bowl.
2. Prepare the sauce by mixing the crushed garlic, olive oil, lemon juice and salt.
